It's the most wonderful time of the year! Postseason baseball and the start of football. As a die hard Yankees and Jets fan, I am in my glory...although being the early bird that I am, I wish some of these late night games could perhaps be mid afternoon games ;) Got a chance to go to the Jets game a couple of weeks ago against the Jaguars. We had a blast! I think in general, though, there's really nothing better than parking my butt on the couch in front of the TV with friends, family, and food! I hosted football Sunday last week, and one recipe I stole from Rachael Ray was a big crowd pleaser. It's SUPER quick and easy, and I love when I can impress my mom with my cooking ;) So here you go, use it this weekend as you watch the ALDS, NLDS, Giants, or Jets!
Turkey Corn Chili
In a deep pot, saute one chopped up yellow onion in a little vegetable oil. Add a pound and a third of ground turkey meat and let brown. Toss in a can of diced tomatoes, one chopped red pepper, 1-2 chopped scallions (I left those out of mine), and 1 1/2 cup of frozen corn kernels. Add about a tablespoon and a half each of chili powder and ground cumin, and 1-2 ounces of hot sauce depending on how spicy you like it. Let simmer for about 10 minutes, then serve with some tortilla chips, shredded cheese, and sour cream for toppers.
